Sweet Potatoes and Black Bean Burritos

After the holidays I started to look around at what I had bought way more then I needed. I found that had bought more black beans then I needed. Looking towards the future year of working out and eating healthy I decided to try something new. I mean that is the point in the whole year experiment. Decided to break out the air fryer. Starting with the sweet potatoes we want to peel them and dice them up. I took and cubed up a nice large sweet potato.

Once they are diced take and drizzled olive oil then tossed them. Then added some Himalayan salt, a little cumin, and paprika. make sure they are nice and coated. Once that is done take and put then in the air fryer for about 15 mins at 400 degrees. I took and tossed them about halfway.


Being from New Mexico there is one thing that is a must when eating any burrito, Green Chile Sauce. So I mixed up a quick batch of that. It's pretty quick and easy. Started with a small saucepan and about a tablespoon of olive oil. Cut up some onion and mince 2 cloves of garlic. Toss in till the onions and the garlic, let them cook for about 2 mins.

Then at that point take about a tablespoon of flour and mix it. let it cook till it starts to just turn brown. At that point mix in about 2 cups of chicken broth. Bring that to a rolling boil. I took and chopped up about 4 green chiles, you can use canned from the store. Once you have that done mix that in with the sauce.

As that thickens up the sweet potatoes should be done. Take a can of black beans after a quick rinse put them in a bowl with the black beans and mix them together.

I took and got 4 tortillas filled with the potato bean mix and placed them in an 8x8 glass container. I placed it in the oven at 350 degrees for 10 mins. Removed it and covered it with green chile sauce and cheese. Placed it back in for about 5 mins to let the cheese melt.

At this point, it was time to eat. I have to admit it was great. You can take and add sour cream, more cheese or more green chile sauce. You can never have too much.
